Paya is feet in Hindi and Urdu. This fantastic paya soup is one of the many ways to enjoy trotters. We used goat trotters in our paya recipe. You can also use lamb’s if that is what you could find. Our paya soup recipe will yield 4 servings, with 358 kilocalories in each. You will need the following ingredients to make paya soup.

Gingelly oil | 1 tablespoon |
Cumin seeds | 5 grams |
Coriander seeds | 20 grams |
Black peppercorns | 10 grams |
Curry leaves | A sprig |
Green chillies | 2-3 |
Ginger | 40 grams |
Garlic | 50 grams |
Onions | 250 grams |
Salt | To taste |
Hot water | 2.5 litres |
Black pepper powder | To taste |
Coriander leaves | A handful |

Sear Paya
- Set a pot on medium heat.
- Add gingelly oil and allow it to heat up.
- Add paya and sear for 5 minutes.
- Remove paya from heat and set aside briefly.
Make Paya Soup
- Allow the same pot to continue on medium heat.
- Add gingelly oil and allow it to heat up.
- Add cumin seeds, coriander seeds and black peppercorns. Saute for a minute or two and release the flavours.
- Add curry leaves, green chillies, julienned ginger, garlic, sliced onions and salt. Saute for 5 minutes.
- Add seared paya and mix for a minute or two.
- Add the required quantity of hot water. Mix well and bring it to a simmer.
- Seal the pot with an aluminium foil and cover it with a tight lid. Remove the pot from direct heat and mount it onto a skillet. Reduce heat to the lowest and cook for 2 hours.
- 2 hours later, unseal the pot. Add black pepper powder and salt to your taste.
- Add a handful of coriander leaves. Mix well for 2 minutes and turn off the heat.
- Serve the soup without stirring the pot as the sediments are not exactly palatable. Add two to three trotters to each bowl of soup.
