Mustard Greens Recipe – Sarson Stir Fry – Sarson Ka Saag –
Winter is ending. With it ends the supply of winter greens. Besides the usual, mustard greens are easily available this time around and this stir fry is us making merry while it shines. This is very different from the Sarson Ka Saag we showed you last week. So, don’t hold back.
This creamy curry can be eaten with any flat bread or rice. Personally we like to eat this with bread than rice. Before we go any further, let us issue a word of caution. This is a high calorie recipe, be wise and mind your portions. Our recipe will yield 4 servings, with 472 kilocalories in each. Prep Mustard Greens
- Pick the greens from the stem.
- Wash and sort the greens thoroughly. Set aside.
Prep Poppy Seeds
- Set a pan on medium heat.
- Add poppy seeds and toast them for a minute or two. Pay close attention so that you don’t burn them.
- Transfer the toasted poppy seeds to a grinder. Add a few green chillies to your liking.
- Add little water and blitz them into a smooth paste.
Prep Ginger Garlic
- Add equal amounts of peeled ginger and garlic to a blender.
- Blitz into a smooth paste.
Prep Cashews
- Set a pan on medium heat.
- Add butter and allow it to melt.
- Add whole cashew nuts. Toast them for a minute or two and set aside. Pay close attention so that you don’t burn them.
Prep Paneer
Slice paneer into larger rectangles and skewer on to bamboo sticks.
- Set a pan on medium heat.
- Add mustard oil and allow it to heat up.
- Add the skewered paneer to the pan and toast them for 30 seconds each on all four sides.
Stir Fry
- Set pot on medium heat.
- Add butter and allow it to melt.
- Add dried red chillies, cumin seeds and ginger garlic paste. Saute for 2 minutes.
- Two minutes later, add onions and salt to your taste. Saute for 2 to 3 minutes.
- Add poppy seed paste and caramelize for 2 minutes.
- Add mustard greens gradually and wilt it over low heat for 15 minutes.
- 15 minutes later, taste and adjust salt to your liking.
- Add lemon juice, mix well and turn off the heat in 2 minutes.
- Garnish generously with toasted cashew nuts and paneer.
