To Pressure Cook
Potatoes 550 grams
Water As required
For Curry
Sunflower oil 1 tablespoon
Cumin seeds 1 teaspoon
Green chilli 1
Ginger A knob
Onion 150 grams
Deseeded tomato 1
Turmeric powder 1 teaspoon
Water As required
Salt To taste

Instructions : A Simple Ginger Potato Curry Recipe

Prep Potatoes

  1. Wash, dice and transfer potatoes to a pressure cooker.
  2. Cover with water and add a pinch of turmeric.
  3. Pressure cook for 3 whistles and allow the pressure to release naturally.
  4. Drain the solids through a colander and retain some stock.

Make Potato Curry

  1. Set a sauce pan or pot on medium heat.
  2. Add sunflower oil.
  3. Add cumin seeds, ginger, green chilli, onions and salt to your taste. Saute briskly for 5 minutes.
  4. Add chopped and de-seeded tomatoes. Continue to saute until the tomatoes sweat.
  5. Add the pressure cooked potatoes, a pinch of turmeric powder and saute for 2 minutes.
  6. Add very little stock and mix.
  7. Reduce the water content on medium heat for 10 minutes.

Serve as you wish. This ginger potato curry recipe goes well with any bread, dosa and rice. You can also enjoy it as is.
