Bone Marrow Soup – Beef Bone Soup Recipe
We coined the bone marrow soup on the go. We used ingredients that were left over after we made a fantastic beef curry. You know what, this bone marrow soup bettered the beef curry. We usually build our recipes from scratch and this bone marrow recipe will not be an exception.
This exceptional bone marrow soup recipe will yield 4 servings, with 237 kilocalories in each. To make bone marrow soup you will need the following ingredients.

Beef bones | 500 grams |
Garlic | 20 grams |

Water | 2.5-3 litres |
Bay leaf | 1-2 |
Cinnamon stick | 1-2 |
Cumin seeds | 1 teaspoon |
Ginger | 40 grams |

Carrot | 100 grams |
Scallion (Spring onion) | 100 grams |
Coriander root & stem | A handful |
Tomatoes | 4 |

Extra virgin olive oil | 1 tablespoon |

Beef bone stock | 850 ml |

Prep Beef Bones
- Set an oven safe skillet on medium heat.
- Add extra virgin olive oil.
- Add garlic and saute for a minute or two.
- Add beef bones. Saute and brown them for 2 to 3 minutes.
- Transfer the skillet to an oven preheated oven to 200ºC (392ºF) for 45 to 50 minutes.
- 45 minutes later, remove from oven and set aside.
Make Bone Broth
- Set a pot on high heat.
- Add 2.5 to 3 litres of water and bring it to a rolling boil.
- Add bay leaf, cinnamon stick, cumin seeds, ginger, garlic, green chillies, onions, tomatoes, scallions (spring onions), coriander roots, coriander stem and celery.
- Add the roasted bones and garlic to the pot.
- Mix well and reduce heat to low. Cover and cook for 3 hours.
- 3 hours later, filter the broth through a colander and set aside. Discard the solids collected in the colander.
Make Bone Marrow Soup
- Set a pot or sauce pan on medium heat.
- Add extra virgin olive oil.
- Add sliced onions, diced carrots and salt to taste. Saute briskly for 5 minutes.
- Add crushed pineapple and palm jaggery. Saute for 2 to 3 minutes. You can blitz a few fresh pineapple slices in a blender or use pulp leftover after juicing pineapple. You can also substitute palm jaggery with brown sugar, but palm jaggery is the healthiest option.
- Add bone broth and mix well for a minute.
- Add black pepper powder. Mix it in and simmer for 10 minutes.
- 10 minutes later, add chopped cheddar cheese and turn off the heat in a minute. The intent is to get globules of cheddar cheese in every spoonful of soup.
- Serve the soup hot and top it with a teaspoon of chopped scallion (spring onion).
