Akki roti, akki is rice in Kannada and roti is unleavened flat bread in many regional languages of India. This popular breakfast dish from Karnataka is usually made with white rice flour. Let’s not do that. We will break the tradition and make ours wholesome with brown rice flour. Our akki roti recipe will yield 8 rotis, with 134 kilocalories in each. To make akki roti, you will need the following ingredients,

Ingredients, Measurements & Nutritional Values

For Dough
Water 250 ml
Sunflower oil 1 tablespoon
Salt To taste
Moringa leaves A handful
Onions 100 grams
Green chilli 1-2
Ginger 10 grams
Brown rice flour 200 grams
To Grease Zip Lock
Sunflower oil 1/2 tablespoon
To Grease Pan
Sunflower oil 1/2 tablespoon

  • Brown rice contains manganese which helps in producing energy from protein and carbohydrates. It is also essential for a healthy nervous system and sexual health.

Instructions – Akki Roti – Brown Rice Bread

Prep Dough

  1. Set a pot on high heat.
  2. Add 250 ml of water and bring it to simmer.
  3. Add sunflower oil and salt to taste.
  4. Add moringa leaves, sliced onions, chopped green chillies and julienned ginger. Mix and bring the water to a rolling boil.
  5. Dump brown rice flour and wait for a minute.
  6. A minute later, turn off the heat. Using a wooden ladle mix well to form a sticky dough.
  7. Transfer the dough to a vessel at room temperature. Divide the dough into 8 portions and ball them up using the palm of your hands. While working with this dough, dip your hands in a bowl of water at room temperature to prevent it from sticking to your hands.

Prep Zip Lock

  1. Cut open two sides of a zip lock bag to make it flip like a book.
  2. Grease the inners of the zip lock with any cooking oil.

PREP GRIDDLE

  1. Set a griddle on medium heat and allow it to heat up for 5 minutes.
  2. Season with very little cooking oil.

Roll Out Dough

  1. Place dough ball on one leaf of the greased zip lock and gently flatten it into a disk using your fingers.
  2. Cover the flattened disk with the other leaf of the zip lock.
  3. Take a flat skillet or plate. Place it on top of the dough disk covered by the zip lock and press firmly. Watch our YouTube video above to understand the instructions better.
  4. Now the dough would have perfectly flattened into a circular tortilla.

Make Akki Roti

  1. Splash little water on the hot griddle and balance the temperature.
  2. Transfer the flattened dough to the griddle and allow it to cook for two minutes.
  3. Two minutes later, flip and cook for one minute.
  4. A minute later, remove from griddle and serve hot.

    Loved this recipe. The first time i saw this video 2 days,I wanted to give this a shot and yes i did. The rotis turned out perfect and flavors of Moringa, ginger just exploded in my mouth.
